While there are various styles of gin, the distillation process remains the foundation upon which all gin is crafted.

The Art of Craft Gin-Making


Craft gin-making is a labour of love, combining traditional techniques with innovative approaches to create unique and distinctive flavours. Here are the key steps involved in the craft gin-making process:

  • Selecting the Botanicals: Botanicals are the aromatic ingredients that give gin its distinct flavour profile. Juniper berries, the quintessential gin ingredient, provide the backbone of the spirit. Craft distillers often experiment with a wide array of botanicals, such as coriander, citrus peels, orris root, angelica, and many others, to craft their signature gins.
  • Maceration or Vapour Infusion: There are two primary methods of infusing the botanical flavours into the gin. Maceration involves soaking the botanicals directly in the neutral spirit for a period of time, allowing the flavours to meld together. Alternatively, vapour infusion involves placing the botanicals in a separate chamber or basket, allowing the heated vapor to pass through and extract the aromatic compounds.
  • Distillation: Once the botanicals and neutral spirit have undergone maceration or vapour infusion, the mixture is distilled. Distillation involves heating the liquid to produce vapour, which is then condensed to create the final gin. Craft distillers carefully monitor the temperature and timing to capture the desired flavours and aromas.
  • Dilution and Bottling: After distillation, the gin is often diluted to achieve the desired alcohol content. This step allows the flavours to harmonise and mellow. Finally, the gin is bottled, ready to be enjoyed by gin enthusiasts like yourself.
